做法(fǎ ):春笋(sǔn )切成(chéng )片后加少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切(qiē )片,葱切成(chéng )段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖(gài )焖。
