做法:春笋切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切(qiē )成(chéng )段(duàn )。锅(guō )烧热,倒入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后(hòu )转(zhuǎn )中火。煮(zhǔ )到水快熬干的时候(hòu )加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅盖焖。
