做(zuò )法:洗净宰好鲫鱼,洗净淮(huái )山和薏米(mǐ )。用清水把陈皮泡软,拍裂一(yī )小块姜,热(rè )锅(guō ),用姜块在(zài )锅上擦一遍,放(fàng )两勺油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦(wǎ )煲(bāo )里的清水,放入煎煮好的鲫鱼和其(qí )他材(cái )料(liào ),武火煮沸,转中小(xiǎo )火煲一个半小时,下(xià )盐调味即可品尝。
