做法(fǎ ):洗净宰好鲫鱼,洗(xǐ )净淮山和薏米。用清水把陈皮泡软,拍裂一小(xiǎo )块姜,热锅,用姜(jiāng )块(kuài )在锅上擦(cā )一遍,放(fàng )两勺油(yóu ),待油六成热下鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清水,放入煎煮好的鲫鱼和其(qí )他(tā )材料,武火煮沸,转中小(xiǎo )火煲(bāo )一个(gè )半(bàn )小时,下盐调味即可品尝。
