做法:春(chūn )笋切成片后加少许盐捞出后用清(qīng )水浸泡,生(shēng )姜(jiāng )切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩(yǎn )住春笋,盖上锅(guō )盖(gài )大火煮(zhǔ )开后转(zhuǎn )中(zhōng )火。煮(zhǔ )到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
